The best strawberry oatmeal bars. EVER. A delicious mix of soft cookies and crumble pie. These sweet treats are the perfect way to use up those fresh strawberries that are finally in abundance at the grocery store.
(If you’re looking for recipes with frozen strawberries, these strawberry oatmeal bars are also perfect! See the recipe notes for more details.)
They’re sweet, but not too sweet, buttery, and packed with juicy berries.
An easy dessert recipe
Sometimes you want to go a little extra with a strawberry dessert. Then make a strawberry cake.
The top and bottom oatmeal bars are mixed together in a bowl. Since the recipe calls for melted butter, not softened butter, you don’t even need to wait for the mixture to reach room temperature before baking.
Most strawberry oatmeal bar recipes require you to make the filling in a separate bowl.
Not so with these fresh strawberry bars. After you’ve pressed the first layer of dough into the pan, sprinkle the filling ingredients on top: diced strawberries, lemon juice, and a pinch of sugar and cornstarch. Then sprinkle the remaining oatmeal crumbs on top.
